Easy Veggie Fajitas





























This recipe is a personal favourite of my family and friends. It's a more hearty dish which all the meat-loving men in my life can be satisfied with, seeing as it's a vegetarian dish. Again, like my other recipes, it's inexpensive and easy to make; with just a frying pan, knife and spoons being your tools of choice for this one. This fajita is full of flavour and packed with vitamins and nutrients. My recipe makes 4 servings - enough for the whole family.


INGREDIENTS

  • 4 soft flour tortillas
  • 400g box of any type of mushroom, roughly chopped 
  • 1 red onion, diced
  • 2 or 3 cloves of garlic, crushed
  • 2 bell peppers (I use 1 red and 1 green)
  • 2 or 3 radish's, sliced
  • 2 spring onions, finely chopped
  • 1 cup of Quorn chicken-style pieces
  • 1 teaspoon of cumin
  • 1 teaspoon of mixed herbs
  • 1 teaspoon of cayenne pepper
  • 3 tablespoons of tomato puree
  • crushed black peppercorns, to season throughout
  • 2 tablespoons of Salsa sauce
  • pinch of salt
  • Grated cheese of any kind to sprinkle onto when finished

METHOD

  • Turn the hob onto a high heat setting and place your frying pan on top.
  • Add a drizzle of good quality olive oil and let the pan heat up a little.
  • To the pan add the garlic, red onion and spring onion and let them sweat a little bit.
  • Add 1 tablespoon of tomato puree and stir for a couple of minutes. Turn the heat down to a medium heat.
  • Add the peppers, mushrooms and radish's to the pan and stir. Add a tiny amount of water as you go to stop anything burning or sticking to the pan.
  • Add in the cumin, mixed herbs, cayenne pepper, salt, salsa sauce and season with black pepper. Stir well.
  • Put the mug of Quorn into the microwave for 1 minute if cooking from frozen. 
  • When defrosted, add the Quorn to the pan along with the rest of the tomato puree and add a small splash of water. Let the mixture cook away for about 5 minutes, stirring it occasionally.
  • Put the soft flour tortillas into the microwave for about 1 minute to warm up.
  • When the fajita mixture is cooked, use a tablespoon to put dollops onto the centre of the warmed flour tortillas. 
  • Add the cheese and fold each side together and secure with a cocktail stick.
  • Serve with side salad and enjoy.
